Clean Eating Banana Oatmeal Muffins

Snowy days often get me in baking mood and today was the perfect day to whip up a batch of  muffins.  Since I usually have a bunch of overripe bananas taking up space in my kitchen, why not try a healthy twist on one of my favorite recipes.  


These muffins are absolutely delicious and make the perfect snack anytime of day...adding a few dark chocolate chips only adds to their yumminess.  Of course, they quickly vanished in my house today right out of the oven...I'm guilty of at least two muffins today!  



Oh...and did I mention these are actually pretty healthy too???

Clean Eating Banana Oatmeal Muffins Recipe
3 cups quick cooking oats
2-3 very ripe bananas
1 cup nonfat greek yogurt
2 eggs
2 teaspoons vanilla
1/2 cup honey or sweetener of choice
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon cinnamon
1/2 cup chocolate chips or nuts or blueberries or whatever else you wish to throw in....

-Preheat oven to 350
-Place oats in blender or food processor and pulse for about 30 seconds
-Place bananas in bowl and beat for 30 seconds, add greek yogurt, eggs, vanilla, and honey and mix well.  
-Add in baking powder, baking soda, cinnamon and oatmeal and mix until just combined.
-Stir in chocolate chips
-Scoop into prepared muffin pan about 3/4 of the way full
-Bake 10-15 minutes or until toothpick inserted comes out clean

  5. I made these just now! I only had about 3/4 cup of Greek yogurt, I substituted eggs for 1/2 cup of applesauce (unsweetened), added in 1/4 cup of walnuts, used agave instead of honey and they turned out great! The cinnamon adds a heavenly smell to them! I loved them!
